Zucchini




Zucchini time is here!! Yeah!!?? Yesterday we had zucchini stir fry, today chicken and zucchini cassarole. Saturday we had zucchini cake ( just like carrot cake). The kids think that it is so fun to go out in the garden and pick it every day. will soon run out of ideas. Don't know what we will eat tomorrow---but it WON'T be
zucchini!

We love this Soup

But here's my recipe....
1 jap pumpkin (peeled and chopped)
2 medium potatoes (peeled and chopped)
1 onion (peeled and chopped)
2 small cloves of garlic (peeled and finely chopped)
2 packets of Chicken noodle soup mix
Fill the pot with enough water to cover the entire lot.

Put on stove and let it simmer/lightly boil for hours. The longer, the better.
Just don't boil to hard otherwise it'll start sticking to the bottom of the pot.

Once cooked, drain off (but keep aside) about half of the water. You may need it later if the soup is too thick. You can either use a barmix (although it doesn't seem to get out all the lumps). I use a food processor, then I put it through a sieve (but I have a fussy kid that doesn't like lumps!)
Once finished and if it looks too thick, grab the water you saved and add a little at a time, then barmix again.

I don't season the soup until it's being served up. On top of the soup I add salt and pepper and a big dollop of cream!

Refrigerate whats left over, will keep for a couple of days as long as cream hasn't been added. It will turn very thick when cooled but once heated, will thin down.

This is soooo yummy! And if you've got heaps of zucchini's, just replace the pumpkin and exclude the garlic and you've got zucchini soup.

I have a great recipe for squash lasagna. You slice the zuchinni and use if in place of the noodles. It is really good. Even the boys like it. Let me know if you want it and I"ll email it to you. Love and miss you all!
